Malcolm's Favorite Thousand Island Dressing
Think veggie burgers, barbeques and summer on the beach. Yum! Malcolm searched
high and low for an alternative to the bottled thousand island dressings commonly
available. He craved a healthy dressing that could conjure up the memories of
childhood without offending his adult palate. This recipe not only did the trick,
but became the most requested summer dressing of the season.
- 3 tablespoons extra virgin olive oil
- 1/2 cup to 3/4 cup soy milk
- 1 clove garlic crushed
- 1 tablespoon sweet pickle relish
- 1/4 teaspoon horseradish
- 1 tablespoon ketchup
- 2 teaspoons lemon juice
- salt and freshly ground pepper to taste
In a blender, add the soy milk, garlic, ketchup, horseradish, lemon juice,
and salt and pepper. Blend for about 20 seconds.
Slowly drizzle in the olive oil on low speed, allowing the dressing to thicken,
for about 30 seconds.
Stir in the pickle relish and adjust the seasonings to taste. Use vegan mayonnaise,
instead of the soy milk and olive oil combination to make a great burger or
sandwich spread.
